*I shouldn’t brag, but these are amazing*

 

1 ½ cups all purpose flour (spelt works nicely in this cookie) if using whole grain flour, add more spices it

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ teaspoon ginger

a dash of cardamom

1/4 teaspoon ground cloves

1 cup (2 sticks) butter, softened

1 cup firmly packed brown sugar

2 eggs

1 teaspoon vanilla

2 cups uncooked oats (quick or old fashioned)

1 cup butterscotch chips or semi-sweet chocolate chips or dried cranberries, cherries, or currants

1 cup chopped walnuts or pecans (optional)

 

Heat oven to 350 degrees F

In medium bowl, combine dry ingredients and mix well

In large bowl, beat butter and sugar until creamy; add eggs and vanilla, beat well

Add flour mixture to butter mixture until well combined

Stir in oats until all are wet, then add nuts and chocolate chips gradually

Spoon onto cookie sheet (best on stone sheet) and bake 10-12 minutes or until light golden brown

Cool 1 minute on cookie sheet, then remove to cooling rack
